Giant CousCous and Chickpea Salad

You can find giant couscous in the supermarket. It makes a nice impact dish for folks that won’t have a clue what it is, but otherwise, I’d stick to regular size grains. The teenager liked it, but I doubt he’d stump up the extra cash for it when pressed.

This is a simple wee salad to accompany any dish you like. I eat it as it is for lunch.

makes a large bowl

1 box Giant CousCous (we found this in Sanisburys)
1 can organic chickpeas
2 organic carrots, grated
2 diced organic tomatoes
75g organic sultanas
handful fresh coriander leaves, roughly chopped

75ml Organic olive oil
Organic lemon – juice + rind
1 tbsp ground cumin
1 tbsp ground coriander
2 garlic cloves, grated
1 tsp grated ginger

  1. Make up the couscous according to the packet instructions. You can choose to use veg (or chicken) stock for more flavour.
  2. Rinse the chickpeas well and toss them into a large bowl.
  3. Combine the ingredients for the dressing and add into the bowl with the veg.
  4. Add the prepared cous-cous and coriander leaves and mix everything well before serving.
