Sweet & Sour Tofu with Basmati Rice

A superb tofu recipe discovered at Cauldron Foods, the tofu manufacturer. We didn’t have any pineapple in the house, but did have a can of sliced peaches, so used these as a substitute, which worked out perfectly well – a genius idea from the teenager!

serves 4

2tbsp vegetable oil
1 large red pepper, sliced
1 carrot, peeled and sliced
3 spring onions, sliced
400g pineapple chunks, drained
3 tbsp soft, light brown sugar
4 tbsp cider vinegar
4 tbsp tomato ketchup
250ml vegetable stock
1 tbsp cornflour
salt & pepper to season

This is a very sweet dish, so my advice is to tone down the sugar and use tomato puree rather than ketchup, and I did find it hard to brown the tofu chunks without them sticking, although this is probably due to my wok not being well seasoned enough.

It’s a winner, though, loved by the teenager and vegetarian both – and quicker to prepare than waiting for a takeaway delivery.
