Jacket Potato with Home Style Baked Beans and Cottage Cheese

Gosh, these ‘recipes’ just get easier and easier! One Friday night and the boys were off to a show with the vegetarian’s cousin, so I took advantage of the large potatoes, stuck them in the oven and pulled out the standby beans to make a tasty home made version of baked versions before the addition of some cheese. To be honest, a little too much food for me in one go but the hungry boys devoured in no time.

serves 3

3 large organic potatoes
1 tub organic cottage cheese (added cheddar for the teenager)
1 can organic black beans
1 can organic haricot beans
1 can organic kidney beans
1 can organic chopped tomatoes
1 organic onion
60mls vegetable stock
organic thyme from the garden

  1. Scrub potatoes, pierce and bake in a hot oven for 1.5hrs.
  2. Chop onion, simmer in the vegetable stock and thyme leaves for a few minutes until soft.
  3. Blend the onion mix until smooth before returning to the pan with the mixed beans (rinsed) and tomatoes and simmer for 8 minutes until warmed thoroughly.
  4. Serve the beans on the potatoes, top of with the cheese of your choice and enjoy.
