Chopra Center Eggless Tofu Salad

I know if I gave you this salad you wouldn’t dream for a minute that there was no egg and that it was instead made from tofu! A delicious filling for a wrap on a warmish and sunny spring day, especially if you manage to sneak in a few off season veggies to liven things up some :) In my version, I’ve toned down the mustard for the dressing – if you like it spicier, you can add another tablespoon of mustard.

serves 4

250g pack firm tofu
4 organic spring onions, chopped
2 organic celery sticks, sliced
2 organic carrots, grated
handful fresh coriander leaves, chopped
1 tsp tamari soy sauce
pinch black pepper
1/2 tsp ground turmeric
1 tsp curry powder
1 tbsp Dijon mustard
60ml organic plan bio yoghurt

  1. Crumble the tofu in a bowl using your hands.
  2. Add the veg and herbs and the tamari and mix well with a fork.
  3. Separately combine the remaining ingredients in a small bowl, whisking together.
  4. Add dressing to the tofu mix and serve as a salad, or in as a filling for a sandwich.
