Miso with Cabbage, Sweetcorn & Rice Noodles

Miso with Cabbage, Sweetcorn & Rice Noodles

This is a marvellous low fat, my body is a temple lunch. Best quality organic miso paste is all you need for a great soup base – the rest is really up to you!

serves 2

1 tablespoon Miso paste
1 litre boiling water
1 portion dried organic rice noodles
1/2 head organic green cabbage, rinsed & shredded
1 cup organic sweetcorn kernels (fresh, canned or frozen)
2 cloves organic garlic, finely sliced
1/2 inch fresh ginger root, finely grated (or 1/2 tsp dried ginger)
1 tsp Chinese 5 Spice powder
Tamari sauce to serve

  1. Dissolve the paste in the boiling water, add to a large pan, bring to the boil, then simmer.
  2. Add garlic, ginger and spices to broth and stir well.
  3. Add noodles and cabbage and stir, simmering gently for a few minutes.
  4. Toss in  sweetcorn to warm through before serving, with added tamari to taste.
