Winter Minestrone Soup

Winter Minestrone Soup
It’s officially spring, I know. But this soup is a staple throughout the winter and well into the summer. I can blend it for the teenager who despises lumps of veg, and the addition of a can of tomatoes makes it satisfyingly bright in colour. You can mix and match the veg to suit your veg box.

serves 4

1 litre vegetable stock
1 organic onion, sliced
1 organic potato, cubed
Potato sized portion of organic swede, cubed
2 organic carrots, chunked
1/2 organic green cabbage, sliced
400g can plum tomatoes
2 cloves garlic, sliced
400g can cannellini beans

  1. Soften the onion and garlic without browning for a few minutes, then add the rest of the cubed veg and heat gently until soft.
  2. Add tomatoes (smoosh them up a bit if they’re whole) and stock, simmer for about 20 minutes.
  3. Add beans and heat through.
