Chilli Bean & Quorn Burritos with Mixed Sprouts

Fridays usually mean a quick supper for us after returning home from the teenager’s film class. Whilst he’s working on becoming the next Hitchcock, we treat ourselves a little in the cafe bar at the Arts Centre. Come home time, we’re très relaxed so this is the kind of meal I throw together.

Not exactly heaving with the actual veg box greenery, the cheddar, creme fraiche and tomatoes we have delivered with the box come are central to the success of this dish. The added veg booster is home grown mixed sprouted seeds – stagger a few trays over the course of the week and you’ll always have a superfood to hand. If I’d had an avocado I’d have made a quick guacamole, too.

It’s not really vegetarian, of course – all I’ve done is substitute what would normally be beef mince for Quorn mince. As I’ve said before, don’t think of recipes (you can see I’m no masterchef  - instead think of these posts as ideas :)

serve 4

4-8 Tortilla wraps (1-2 each, depending how hungry you are – and packet wraps for sake of speed)
1 bag Quorn mince (I usually cook the whole packet and keep the leftover mix for lunch next day)
1 organic onion, finely chopped
2 x 400g organic chopped tomatoes
400g organic kidney beans, rinsed and drained
1 tablespoon cumin
1 teaspoon chilli powder
1 teaspoon dried marjoram
Fresh coriander, to serve
50g Grated cheddar cheese, to serve
50g creme fraiche, to serve
100g mixed sprouted seeds, to serve

  1. Gently cook the onions until soft, then add in the spices & herbs and stir for 2 minutes.
  2. Add chopped tomatoes and Quorn mince and simmer for 20 minutes.
  3. Meanwhile, warm Tortillas on a very low heat.
  4. Gather all other ingredient, ready to assemble burritos.
  5. Add in the kidney beans for the last five minutes of cooking.
  6. Assemble your burritos, spreading creme fraiche on the warm wrap, adding a dollop of mince mix on top, sprinkle with cheddar and sprouts, wrap and serve.
