Fried Halloumi,Veggie Sausages, Broccoli & Sweetcorn & Haricot Bean Mash

Fried Halloumi with Veggie Sausages Broccoli & Sweetcorn & Haricot Bean Mash

One of the teenager’s most favourite ingredients is halloumi cheese. Adding the veggie sausages into this dish is most certainly overkill, but it was one of those times when I didn’t know what I was making until I was making it. You get those, right?

Some broccoli for me and the vegetarian and sweetcorn for the young man, serving this on a bed of bean mash went down a treat.

serves 3

1 organic onion, chopped
3 cloves garlic, chopped
60 ml vegetable stock
Few sprigs fresh lemon thyme
1 can organic haricot beans
1 pack halloumi cheese
2 cloves crushed garlic
2 tablespoons extra virgin olive oil
2 teaspoons fresh lime juice
1 tablespoon organic olive oil
4 vegetarian sausages
1/2 head broccoli, chopped
250 g frozen sweetcorn

  1. Gently cook the onions and 3 garlic cloves in the stock until soft.
  2. Add in thyme leaves and beans and cook on a low heat for another 15 – 20 minutes (keep stirring).
  3. Put veggie sausages in a pan with a little oil, and fry gently on a low heat.
  4. Meanwhile, prepare broccoli and steam for 8 minutes.
  5. Add crushed garlic,  extra virgin olive oil & lime juice to a shallow dish.
  6. Fry halloumi slices in a dry frying pan until crispy on each side.
  7. Put cooked halloumi and cooked, sliced sausages into pan with oil, garlic & lime.
  8. Add sweetcorn to steamer with broccoli.
  9. Add beans to food processor and whizz up in to a mash.
  10. Serve halloumi and sausages with the veg on top of the mash.

If I was going to make this again, I’d leave out the sausages and add another can of beans to the mash.
