Roasted Butternut Squash with Thyme Goats Cheese

Squash is so versatile. I love it when they come visiting via the veg box. I’ve mentioned this isn’t a recipe site and here’s a prime example. A brilliant idea. A super delicious, sophisticated meal. Hardly any method required.

Here’s what you need to serve 2

1 organic butternut squash, washed and halved.
1 round organic goats cheese
Few sprigs fresh thyme
2 tablespoons luscious organic olive oil

  1. Heat oven to 180 Celcius whilst preparing the squash.
  2. Place each half in a roasting tray, drizzle with olive oil and fresh thyme (rosemary or sage would be just as yummy).
  3. Roast for about 20-25 minutes, until the squash is tender.
  4. Break up the goats cheese and divide between two halves.
  5. Back to the oven until the cheese has melted and serve.
