Quorn Swedish Style Balls with Halloumi Cheese in Tomato Chilli Sauce and Cous Cous

Baked Quorn Meatballs with Halloumi and Olives in a Chilli Olive & Tomato Sauce with Cous Cous

This is a speedy veggie dinner when you need something interesting and tasty in fifteen minutes flat! It’s another assembly job, mostly. My equivalent of a TV dinner.

(Serves 3)

1 x bag Quorn Swedish Style Balls
1 x pack Halloumi cheese
1 x jar Seeds of Change Roasted Garlic Chilli Sauce
1 x handful organic kalamata olives
180g wholemeal instant cous cous
Boiled water
1 glug olive oil

  1. Heat oven to 180C.
  2. Place Balls, Sauce, Halloumi chunks, Olives in roasting dish and bake for 20 minutes.
  3. Five minutes before it’s ready, cover cous cous with just enough water to cover, leaving 5mm extra on top, cover and leave to soak.
  4. Remove Bake from oven.
  5. Fluff up cous cous, stir in olive oil & serve on heated plates, pouring other ingredients on top.

The Quorn Swedish Style Balls are easily substituted with real meatballs for a non-veggie version, but you’ll need to brown these first in a pan before adding the other ingredients, and perhaps cook them for a few minutes longer to ensure they’re cooked all the way through.
