Simple Broccoli and Basmati Lunch

Everything is looking very green and brown just now. I’m thinking I need to colour things up a little. But not until we get some supplies in. We’ve only had 2 veg boxes delivered since before Christmas and haven’t been to the supermarket or bought any food online for a couple of months. Supplies are not as exciting as they could be!

This recipe was a quick late lunch idea to use up the broccoli from last Wednesday’s box. I dislike Broccoli so it’s often one of the items that lurks in the bottom of the veg drawer until I relent. This is a great, easily digestible recipe with few ingredients and enough flavour to hint at more than the detestable green thing. It’s a super food, of course it is – I know that! Still, it’s one of the few veggies I can’t – just can’t – get excited about.

(serves 2)

1 x head organic broccoli
1/2 cup x organic basmati rice
2 tablespoons homemade chilli jam (you could substitute sweet chilli sauce)
2-4 tablespoons organic tamari soy sauce

  1. Bring large pan of  (salted: optional) water to the boil.
  2. Chop the broccoli into small pieces (the smaller the better for me) and place in top half of steamer pan.
  3. Rinse the basmati rice in a sieve then place in boiling water, stir once to distribute, bring to boil once more then simmer.
  4. After 5 minutes, place broccoli in steamer pan over the rice and cover.
  5. Rinse rice in boiling water, place back in pan with broccoli, chilli jam & soy sauce and stir to combine.
  6. Serve in heated bowls. A little chopped parsely or coriander would be a fine accompaniment here if you have any to hand or in the garden.

This is also a low fat recipe, so great for speed and when you’re on a low fat diet.
